Vegetarian Meatballs

Tonight for dinner we had Vegetarian Meatballs! They are delicious and very easy to make. Combine 2 cups cottage cheese, 1 cup ground pecans, 4 eggs and mix in breadcrumbs until you get a thick consistency, enough to roll in to balls. Bake at 350F for 35-40 minutes, I used tomato sauce but you can use anything from teriyaki to a grape jelly meatball sauce! Mmm, enjoy!

  2. They are, my husband (who is not entirely veg) asks me to make them all the time! They are soooo good!
